Three entrepreneurs in Cameron County teaming together to offer a second Living Simply Nourished Workshop
next month.
Jeanmare Holjencin, Cristy Solveson and Lindsey Zucal will provide a glimpse of the upcoming
three week intensive workshop series with extended hours in each workshop for even more added value on
Wednesday March 1 at the Cameron County Chamber of Commerce with the free showing of a documentary
called Food Choices. The 90 minute documentary has gained attention nationwide as a scientific approach to
healthy eating. Popcorn, snacks and drinks will be provided for the 7pm showing.
The trio presented their first Living Simply Nourished Workshop in January. Eleven individuals from the
county took the course, sampled and cooked using plant based recipes. While some participated looking to
experiment with new recipes, most have embraced the lifestyle. Recently Aroma Café revamped its menu
adding plant based sandwiches and wraps. “The reaction has been positive,” says Zucal, Aroma Café owner,
“the most popular has been the black bean burger.”
The upcoming workshop begins Sunday March 12 and ends Sunday April 2 with a pot luck with the Elk County
plant based support group. Holjencin a certified Holistic Life Coach and creator of Vedging Out with Jeanmare
says she is pleased with the changes she is seeing in the county. “Emporium Shur Fine has been very receptive
to adding tofu, raw cashews, and a variety of plant based grains on the shelves.”
The workshop includes recipes, ideas for meal planning. Solveson, the owner of FREERANGE Holistic Health
and certified in nutrition and meditation hopes that those with medical issues will consider taking the workshop.
“The plant-based lifestyle is the only diet proven to reverse disease,” says Solveson. During the workshop
Solveson will provide information on meditation. “This workshop is looking at the entire well-being.” We
should eat to live not live to eat adds Solveson.
