CC Farmers Market Introduces Dempsey Homestead Sweets


Cameron County Farmers Market 
 Today we’re super excited to welcome Chelsea Dempsey with Dempsey Homestead Sweets, who will be joining the great line-up at the market this year—and someone you’ll definitely not want to miss!

 Chelsea’s love for cooking and baking began at a young age, learning side by side with her dad in the kitchen. Over the years, that early spark has turned into a deep passion and a true culinary talent. She believes in using high-quality ingredients and puts her own twist on everything she makes—whether it’s one of her own original recipes, a cherished family classic, or a reinvented version of something that inspired her.
 Chelsea brings with her a rich background in food and hospitality. For several years, she co-ran The Old Bull in Benezette with a friend, where they served up homestyle restaurant food, ice cream, and a variety of baked goods that quickly became local favorites. Unfortunately, like many small businesses, the restaurant was forced to close its doors during the COVID-19 pandemic—but Chelsea’s passion for food never stopped.
 This season, we’re lucky to have her at every single market, sharing her baked creations with the community. Here’s just a sample of the delicious lineup of treats she will be offering:
 • Homemade Cookies – Molasses oatmeal raisin, white chocolate pistachio, lemon white chocolate, and gooey s’mores 
• Fresh Cinnamon Rolls – Soft, sweet, and perfectly spiced 
• Brownies – Rich, decadent, and made with love 
• Decorated Cakes – Available in vanilla, chocolate, strawberry, and chocolate mocha with mocha ganache frosting 
Chelsea has been working in restaurants since the age of 14, doing it all—from dishwashing to waitressing—but she’s always found her heart in the kitchen. Her favorite role by far? Being the cook! 
Now, with years of experience under her belt and a dream of one day opening her own café, Chelsea is sharing her incredible baked goods with us—and we’re thrilled to be part of her journey.

 NPRC is beginning new a new Culinary Boot Camp beginning in June in Wellsboro at Rookie Cooks Academy. Instructor, James Fry, will lead and pass down some of his expansive culinary expertise throughout each of these two boot camps. 
Thanks to the generosity of the Commonwealth of Pennsylvania, The Fund for Northern Tier Development, and many additional organizations local to Bradford, Potter, and Tioga Counties, these courses come at no-cost to residents from those three counties.

2025 EHS/CCHS Alumni Banquet

 

Dear Alumnus:

The Alumni Banquet, honoring the graduating “Class of 2025”, will be held Saturday, May 24, 2025, at the Cameron County High School, 601 Woodland Ave., Emporium. 
The cost of the banquet is $25.00 for each attendee, which covers the dinner and association dues, as well as supports the Scholarship Fund. Additional donations for the Scholarship Fund are graciously welcomed. 
A “social hour” will begin at 5pm, dinner will be served at 5:30pm. In 2019, it was decided that any alumnus may bring one non-alumnus guest to the banquet. 
This year the banquet will also be open to alumni who attended EHS/CCHS but may not have graduated from EHS/CCHS.

Please use the enclosed form to make your dinner reservation, to make a donation to the Alumni Association, to make a donation to the Alumni Association/Bibi Park Memorial Scholarship, to make a donation to the Harriet Kennedy Horning Scholarship Fund, or to only pay dues. Return the completed for, along with a check made payable to EHS/CHS Alumni Association and mail to Ruth Metcalf, Treasurer, 216 W Allegany Avenue, Emporium, PA 15834 on or before May 5, 2025. Reservations will not be accepted after that date.

We recognize 3rd and 4th generation families (graduates of EHS/CCHS) that have a senior graduating this year. Please note – to be recognized, each member must attend the banquet. Any questions, please call me at (814) 594-4765.

As always 50/50 tickets will be sold at the banquet.

A dance sponsored by the 50-year class, will be held at the VFW, immediately following the banquet. The dance is open to anyone 21 years or older; however, any graduating senior that attends the banquet is invited to attend. You do not have to be a graduate of EHS/CCHS to attend the dance. There is no admission fee to attend the dance.

Happening this Saturday, May 3, 2025 at 2 PM VFW in Emporium.

The event covers the Legacy Behind Cameron County's Conservation Corp Camps (CCC). Who were these men and what did they do leaving a legacy that still remains today.
 Many do not know we actually had six camps. Sizerville - Hunts Run - Bobby's Run - North Creek - Lushbaugh Camp - Wykoff Run Camp 
The presentation will show hundreds of photos of all six camps many never seen before. 
It will cover the Pepper Hill Fire and the legacy behind Memorial Springs. 
We'll even show a video taken at the Hunts Run Camp in 1940 while still in operation.
 Refreshments will be provided.
 It is open to the general public and FREE!

 *** A pick-up post will be posted as soon as the items are sorted. The plan is to have them ready for you by the next morning to start picking up. 
 *** There is a pick-up bin right in my car port by the white door into our garage. 626 Rich Valley Road. There is also a locked cash box hanging by this bin for you to drop your payment off when picking up. Please label your payment (there will be envelopes and a pen if you need them).

 Hi everyone! If you know me, you know I have a deep love for all things crafting, animals, and books (hence the idea for the name). So when the opportunity presented itself to purchase everything to start our own wax melt business, my husband and I immediately jumped on it.
 I’m so excited to start this journey and so grateful to Maddie from The Wax Co for making it possible.

 While I may not be our original wax queen, I still plan to provide the best quality wax melts possible with some of the same scents you all know and love and hope to add my own personal touches to this business line!

Bobby's Run Hunting & Fishing club "Adopt a Highway Road Clean Up

Sunday, April 27th was the annual Bobby's Run Hunting & Fishing club "Adopt a Highway Road clean up. The cleanup began at the Lewis and Hockenberry sawmill and extended to Rich Valley, Clear Creek and Bobby's Run. Thank you to all that participated!

Mountaineer Search and Rescue Team Roadside Cleanup

On Thursday, April 24th, the Mountaineer Search and Rescue team held their annual roadside cleanup. The SAR team adopted Whittmore Hill from the Broad Street bridge to the top stop sign and for the past 25 plus years, the SAR team has been cleaning up Whittmore Hill. 
Noticing an accumulation of tires over several years, the team decided to spend one night removing them. A total of 83 tires were pulled up over the bank and were collected within about one mile of the roadway.

CC Farmers Iarket Introduces Spolski Maple

 


Today we are excited to welcome back one of our favorite vendors from last year -Tom Spolski with Spolski Maple!

Tom has been crafting his delicious maple syrup for over 14 years now, and his operation continues to impress. Based right here in Cameron County, he taps 460 soft maple trees across three locations, including Hunts Run. Despite the size of his setup, Tom handles everything himself—a true one-man show!
Thanks to a tubing system he installed a few years ago, sap collection is a bit easier, but the dedication and effort it takes to produce his syrup is no less impressive. As Tom puts it, he’s got a system, and extra help would just slow him down—lol!

Once he collects the sap, Tom uses a Reverse Osmosis machine to remove 60–80% of the water before boiling it down into the rich, sweet syrup we all love. After filtering it through a press to remove any sand or debris, it’s bottled and ready to enjoy. The result? Smooth, golden syrup that’s perfect on pancakes, in cocktails, baked goods, or anything else that could use a touch of natural sweetness.

In addition to his classic maple syrup, Tom has been busy this winter creating a growing variety of infused flavors: • Cinnamon maple syrup – a cozy, flavorful twist on the original • Vanilla bean infused – smooth and mellow • Coffee infused – perfect for a morning pick-me-up • Bourbon barrel infused – rich and bold with subtle oak notes • Blueberry infused – sweet, fruity, and ideal for summer treats • And in the works: he’s trialing a habanero infused maple syrup for those who like it sweet and spicy!

I was lucky enough to taste all these flavors yesterday and can vouch for their incredible flavor, all were absolutely delicious!

Also, don’t forget about his maple mustard, a fan favorite! It’s fantastic on sandwiches or whisked into a vinaigrette for a homemade dressing. If you haven’t tried it yet, you’re seriously missing out!
